As part of Biz’s 101 Days of Summer Challenge I took on the challenge of trying at least one new recipe a week. Last week I was an over achiever & went with two 😀 One being the yummy toddler approved egg muffins. The other recipe was a Light Slaw with Cranberries & Honey by Marisa from Loser for Life. Huge hit with the family…including my Father-in-law who is ALL about the slaw! I kept making it throughout the week for lunch too.
Of course, I had all ingredients on hand except the cranberries, so I tossed in some raisins. Still was fantastic. I bought tons of dried cranberries today so it’ll be made the right way from now on. 😀
Light Slaw with Cranberries & Honey
- 16 oz package coleslaw mix (shredded cabbage and carrots)
- 1/3 cup dried cranberries
- 1 green onion, sliced (green and light green parts only)
- 1 Tbsp olive oil
- 2 Tbsp apple cider vinegar
- 1 Tbsp honey
- 1 tsp salt
In a large bowl, whisk together olive oil, vinegar, honey and salt. Add coleslaw mix, green onions and cranberries to bowl with dressing. Toss well. Refrigerate for 1 hour before serving.
Makes 8 servings. 1 PointsPlus per serving.
I have to be honest….I couldn’t break it into 8 servings. (blush) We split it into 4. At 4 servings it came out to 3 PointsPlus per serving.
I have it paired here with another one of my many favorites from Trader Joe’s…. the BBQ Chicken Teriyaki. FAN-FREAKIN-TASTIC. First of all it’s microwavable, so dinner is done in a few short minutes.
Check out the ingredients: Skinless Chicken Leg Meat, Water, Sugar, Soy Sauce (Water, Wheat Soybean, Salt), Salt, Sake (Rice, Water, Yeast), Lime Juice, Ginger, Garlic, Green Onion.
The only downside is the amount of sodium, but easy solution – only use one of the two bags of sauce they provide. There is more than enough sauce in one bag. (Especially if you’re not adding a rice dish & need the extra sauce.)
I also had to share tonight’s dinner… Another Dream Dinners rave – Martha Stewart’s Soy Glazed Steaks with Wonton Crisps. 7 PointsPlus per serving – I wrapped up one of these babies for me to take to work for lunch tomorrow.
