Recipe Review–Lemony Linguine with Turkey Sausage & Spinach

It’s been a while since I’ve done a recipe review!

Last night I had some delicious turkey sausage thawed out planning to make Skinnytaste’s Sausage Stuffed  Zucchini Boats – which by the way are AMAZING!!!  I made it a couple of weeks ago & couldn’t get enough.  I actually hid the leftovers so I could take them to work for lunch the next day.  Rich asked for more, but I said there was none.  Smile with tongue out

Being I knew it was going to be a night where I needed something insanely quick & easy, not to mention I was craving pasta, I decided to search around & found this recipe on a weight loss support group I frequent on Facebook – well, actually the girl took a picture of the magazine & didn’t include the recipe itself.  So I did a simple Google search & the recipe appeared on a blog called Dinner with Friends.  Of course, as luck would have it I didn’t have fresh spinach on hand, but I did have chopped frozen.  I also didn’t have any shallots, but surprisingly I did have green onions.  Perfect – I’ll make it work & I did.

Lemony Linguine with Turkey Sausage & Spinach

(adapted from Dinner with Friends, originally from Weight Watchers)

Ingredients:

  1. 1 box of Barilla Whole Grain Linguine
  2. 1/2 lb. of Turkey Sausage
  3. 10oz. Frozen Chopped Spinach
  4. 1/8th cup of Chopped Green Onions
  5. 1 – 2 Lemons

Directions:

  1. Boil water & cook pasta according to directions on the box.
  2. While pasta is cooking, remove turkey sausage from casing & brown in skillet, breaking up with spatula.
  3. Steam frozen spinach in microwave, drain & then add to sausage along with green onions.  Continue to warm a couple of minutes.
  4. Drain pasta & add to sausage/spinach mixture.
  5. Squeeze one to two lemons according to taste.  (I did closer to two!)

I also sprinkled a little bit of Pecorino Romano cheese when serving.  There’s something about having pasta that we need to sprinkle some PRC on it!

The results – delish!  Nice & light with the lemony flavors for summer!  We’ll definitely make again!

Oh – and most importantly – it’s Toddler…errr….Batman approved!

    Oh that looks really good! I made a lemon pasta with cherry tomatoes and spinach and garlic and shallots once too and loved it but this would be even better because of the turkey protein to help make it more filling.
